These One Pot Camping Recipes That Will Get You Outdoors More

You deserve a satisfying and filling meal after a long day outdoors. But just the thought of preparing food and cooking it (and then cleaning up afterwards!) Over a campfire makes you just want to eat something ready to eat. The good thing is that there are quick recipes that can be prepared and cooked without problems, such as meals in a pot. One pot meals are perfect for camping – they don’t take forever to cook, but they are extremely filling!

Try these one pot camping recipes the next time you’re on an outdoor adventure:

Campfire taco in a skillet

What do you need:

  • 1/2 kg. Ground beef

  • 1 can diced roasted tomatoes

  • 1 can of pinto beans

  • 1 package of Mexican cheese mix

  • 1 green pepper

  • 1 small onion

  • 2 garlic cloves, minced

  • 1 tablespoon of oil

  • 1 tablespoon chili powder

  • 1 tablespoon of cumin

  • Salt

Heat the oil in a skillet over hot embers and then cook the onion and bell pepper for 1 minute. Add the garlic, season with chili powder, cumin, and salt, and cook one more minute. Add the ground beef to the skillet and cook until golden brown, about 5 minutes.

Add tomatoes and beans until hot. Remove from heat and cover with cheese. Serve when the cheese has melted.

What do you need:

  • 8 eggs

  • 3 large golden potatoes, cut into 1/4-inch pieces.

  • 2 bunches of spinach

  • 1 medium onion

  • 1 red bell pepper

  • 1/4 cup parmesan grated

  • 3 tablespoons of butter

  • 1/2 teaspoon chili flakes

  • Salt

Fill a cast iron skillet with water (about 3/4 full) and add the potato wedges. Boil for 6 minutes over the fire until the potatoes are soft (easy to cut). Drain and reserve.

Heat the oil in the same pan and fry the onion and red pepper until soft. Add the potatoes and season with chili flakes and cook until the potatoes are golden brown, about 3-5 minutes.

Add the butter and spinach and stir until the butter melts. Finally, make 4 “holes” in the potatoes and break 2 eggs into each one. Cover the skillet and let the eggs cook from the heat of the campfire, until ready to cook.

Remove from campfire and then cool for a few minutes before slicing and serving!
