What’s for dinner? 30 minute menus for 2010 – 25th edition

This is the 25th edition of the 30-minute weekly menus for 2010. I like to make the weekly menus on Thursday or Friday, do the shopping on Saturday, and start the weekly menus on Sunday.

I hope you have big plans to honor the dad of the house! It is always good to have a reason to celebrate; the men in our lives certainly deserve to be celebrated. I have planned a wonderful London Broil with fresh tomato and corn sauce for a good ‘manly’ meal. Making this menu even better is that any leftover meat will be used for the Beef and Brie Panini on Tuesday. Enjoy being with your Parents!

The Saturday menu with pesto chicken and caprese salad is worthy of company but easy enough for a family menu. If you have company over the weekend, it will be a very nice meal for your guests and you will have time to enjoy with your friends too.

You’ll find that I use various cooking methods, mix and match, to get dinner on the table fast! (The ingredients in parentheses show some of my quick prep steps.) You can always substitute your favorite made-from-scratch recipes when you have more time.

Sunday (Father’s Day):
London Broil with fresh tomato/corn sauce (canned corn; save some meat for Tuesday, buy extra fresh tomatoes for Saturday)
Baked potatoes (microwaved and then baked to finish)
Single Layer Chocolate Cake (Cake Mix)

Monday:
Tortillas/Bean Stacks (vegetarian; buy tortillas, canned salsa, canned black and kidney beans, shredded cheese; buy extra black beans for Tuesday)
Seasonings and vegetables (jarred seasonings, bagged shredded lettuce)
Spanish Rice (diced canned tomatoes; buy extra canned tomatoes for Tuesday and Friday)
Pear Tart (chocolate cookie pie crust, canned pears, jarred jam, bottled fudge topping)

Tuesday:
Steak & Brie Panini (Sunday Steak)
Baguette and Condiments (prepared sauce of horseradish and Dijon-style mustard)
Tex-Mex Salad (canned black beans, corn, tomatoes, bell pepper, and ripe olives)
Apples on ice cream (bought ice cream; buy extra ice cream for Friday)

Wednesday:
Warm Chicken Salad (cooked or canned chicken, canned chutney, canned pineapple, bagged vegetable salad)
Sliced ​​Apples With Grapes
Chocolate Nut Toffee (boxed graham cracker crumbs, chocolate morsels)

Thursday:
Quick Baked Ziti (vegetarian; jarred pasta sauce, bagged shredded cheese)
Sautéed spinach (bagged baby spinach)
Individual Cherry Pies (purchased pastry shells, canned cherry pie filling)

Friday:
Grilled Shrimp with Greek Vegetable Sauce (cleaned and deveined shrimp, canned tomatoes)
new potatoes
corn on the cob
Ice Cream with Apple Crunch Topper (purchased ice cream)

Saturday:
Italian Chicken (boneless, skinless chicken breasts, jarred pesto, or jarred pasta sauce if your family doesn’t like pesto)
Linguini (boxed pasta)
Stacked Caprese Salad (Italian Dressing in a Jar)
Peach Crisp (canned peaches)
