What’s for dinner? 30 minute menus for 2010 – 26th edition

This is the 26th edition of the 30-minute weekly menus for 2010. I like to make the weekly menus on Thursday or Friday, shop on Saturday, and start the weekly menus on Sunday.

The 4th of July is here! Yes, cookouts, picnics, fireworks, the works! What a wonderful time of summer for big celebrations. How are you going to celebrate? I’m hosting a barbecue in my own backyard, but the menu is also great for picnics in the park or to take with you wherever your gathering is going. Enjoy your ‘do’!

To help the budget during these tough times, I’ve included a Bake Once Eat Twice combo with the menus of Turkey Breast with Country French Dip plus Mexi-Turkey Wraps. You’ll even have turkey for sandwiches during the week.

You’ll find that I use various cooking methods, mix and match, to get dinner on the table fast! (The ingredients in parentheses show some of my quick prep steps.) You can always substitute your favorite made-from-scratch recipes when you have more time.

Sunday (July 4):
Mixed Grill BBQ Party
Buns, Condiments, Sauces (bought condiments, jarred sauces)
3 Bean Salad (3 Bean Jar Salad)
Cole Slaw (bagged salad mix, jarred salad dressing)
Cilantro Lime Corn on the Cob
Chips
Baked beans (canned beans)
Grilled Fruit Skewers with Lemon Dip (purchased yogurt)

Monday:
Turkey Breast with Country French Dip (slow cooker; jarred Alfredo sauce; save some turkey for Wednesday)
Long Grain Wild Rice (Boxed Rice Mix)
Sauteed Brussels Sprouts
Sponge cake (purchased sponge cake, frosting prepared)

Tuesday:
Super Dinner Stuffed Potatoes (vegetarian; microwaved and oven-baked potatoes to finish, shredded cheeses, bagged chopped vegetables)
Mandarin Spinach Salad (bagged baby spinach, canned mandarin oranges, bottled Asian-style salad dressing)
Single Layer Yellow Cake with Berries (yellow cake mix, frozen whipped topping, berries)

Wednesday:
Mexi-Turkey Wraps (turkey starting Monday; bagged lettuce and shredded cheese)
Black Bean and Corn Salad (canned black beans and corn)
Corn Chips and Ketchup (Bagged Corn Chips, Jarred Ketchup)
Decorated Sugar Cookies (purchased sugar cookie dough, save remaining cookies for Thursday)

Thursday:
Easy Cheeseburger Pie (baking mix, shredded cheese)
Green beans
Mixed Salad (bagged veggie mix lettuce, jarred salad dressing; buy extra tomatoes for Friday)
Sugar Cookie Apple Crisp (Wednesday Cookie or Cookie Ready Dough, Canned Apple Pie Filling)

Friday:
Grilled Tilapia
Fettuccine with green peas (boxed pasta, frozen peas)
Roasted Tomatoes (Grated Parmesan Cheese)
Heavenly Cherries Jubilee (purchased angel food cake, canned cherry pie filling)

Saturday:
Meatball Casserole (Frozen Meatballs)
Bread Bowls (chilled crackers)
Fruit Salad with Yogurt Dressing (store-bought yogurt, canned mandarin oranges, pear slices, and pineapple)
Buckeye Chocolate Chippers (prepared cookie dough, canned chocolate frosting)
